With over fifteen years of experience in fine dining in Greece and abroad, Chef Giannis Rokanas brings a mature and elegant approach to the kitchen. Having most recently served as Executive Chef at a luxury boutique resort in Crete, where he earned significant culinary distinctions, he also brings leadership experience from other prestigious five-star properties in Greece. His international background includes serving as Sous Chef at the historic Hotel Sacher in Salzburg, along with high-profile culinary assignments for distinguished international guests. Chef Rokanas’ philosophy aligns seamlessly with that of GB Roof Garden, utilizing fresh seasonal ingredients and carefully selected Greek produce, resulting in dishes defined by depth, balance and refined comfort.
The new menu features thoughtfully composed creations, from beef fillet tartare with confit egg yolk and Metsovo ‘Rezzana’ cheese, to Acquerello risotto with langoustines and lasagna with spiced rooster and Arseniko Naxou P.D.O. cream. Signature main courses include turbot with champagne sauce and charcoal-grilled lamb with winter roots and avgolemono foam, alongside a distinctive duck breast with confit-filled ravioli.
