At ERGON Bakehouse Athens, the ethos revolves around meticulous fermentation and anticipation, akin to the slow rise and depth imparted to sourdough starters. This multi-layered space is designed to offer a sensory journey, honoring the art of baking throughout the guest experience.
Begin your exploration on the ground floor at 72H Artisanal Bakery, a next-generation oven where breads and pastries are crafted with 72-hour fermentation starters. Here, traditional methods meet contemporary forms, redefining this ancient craft. Adjacent, an open workspace invites you to witness the transformation of flour into dough, producing pastries and handmade pasta served fresh at +2H Restaurant.
Situated in the heart of Athens, Ergon Bakehouse offers a unique fusion of modern comfort and deep-rooted cultural heritage. The 29 meticulously designed rooms by Urban Soul Project celebrate Greece’s rich baking traditions. Furthermore, each room harmoniously combines decorative elements inspired by the art of baking, such as brick textures and stainless steel surfaces, with artisanal artworks that evoke the cozy atmosphere of a traditional bakery. Designed for profound relaxation, these rooms aim to awaken the senses and provide guests with a complete baking-inspired experience from start to finish.
On the top floor, +2H Restaurant beckons with its experimental menu. Named after the time required to fully appreciate its offerings—two hours after the dough’s 72-hour rest—the dining experience is meticulously crafted to elevate every dish. Guided by Executive Chef Panagiotis Xanthis, continually pushes the boundaries of dough with innovative creations, The sumptuous cacio e pepe crab, a unique sourdough flatbread with zaatar and fior di latte, and the spectacular baked Alaska are among them. In addition, the restaurant features inspired cocktails by mixologist Andreas Giaprakas, each honoring the historic journey of dough.
